CELLAR NOTES

IGP Costa Toscana Passito
Harvested in the first week of September in the town of Seravezza (LU).
Vineyards: “Pelletti” (2007) and “La Costa” (2007), sandy matrix, deep­red clay mixed with yellow and dark-gray.
Exposure: South-­West.
Altitude: 70 meters above sea level.
System: Guyot.
Winemaking: after drying on the vine, manual collection and selection of the best bunches bench, stop until it reaches the desired concentration of sugar on racks: diraspapigiatura then, the clear inoculum with selected yeasts followed by fermentation in stainless steel tanks. After racking aging in steel for four months.

TASTING NOTES

Pale bright yellow and brilliant. A nose intertwine elegant notes of tropical fruits with dates and candied citrus. On the palate the sweetness not tired. Offering a good dowry of freshness and flavor. Fades into full harmony.
Serving suggestions: Verslian Carnival Sweets, Versilian Rice Cake, Coconut biscuits, Blue cheeses.
Serving temperature: 10­ – 18 °C to be reached possibly in her glazes.
