CELLAR NOTES

IGP Costa Toscana White
Harvested in the first week of September in the town of Seravezza (LU).
Vineyards: “Il Campo” (1999) and “Bechelli” (1986), sandy matrix, deep­red clay mixed with yellow and dark-­gray.
Exposure: South-East / North-­West.
Altitude: 10/240 meters above sea level.
System: Guyot.
Winemaking: after harvesting and manual selection on the counter of the best grapes, soft pressing and static sedimentation at low temperature; inoculation with selected yeasts, fermentation and aging sur lie in stainless steel tanks for five months.

TASTING NOTES

Upon visual examination is clear, almost crystalline, pale yellow. At nose is intense and complex, floral notes (white flowers) and fruity (peach and apricot) with a mineral finish. In the mouth it is soft to finish with clear flavor. Balanced with good structure.
Serving suggestions: aperitif, flan of tuscan herbs, fried anchovies, cod, Versilian spaghetti, octopus, rabbit casserole, cheese like the typical Scoppolato di Pedona.
Serving temperature: 8­ – 10 °C
